TASTING NOTES
This wine is made specifically for pairing with sushi and sashimi and was co-created by Christophe’s wife Yuka, who is a renowned Japanese chef. “Gyotaku” is a traditional Japanese art form created by pressing paper onto a fish covered in ink. The wine shows flavors of apricot, Gala apple, lime flower and peach. It has wonderfully high acidity keeping it clean and refreshing and a perfect accompaniment to raw fish. -Winemaker's Notes
