This organic wine is a true ma and pa collaboration between husband and wife team of Françoise Le Calvez & Pascal Frissant. For years, the “château” in Château Coupe-Roses was an old service station that Françoise’s father operated decades ago on the other side of the village where it housed the office and was made insulated to store the bottled wine. The vineyards of Chateau Coupe-Roses are at the highest altitude in Minervois, between 750 and 1,350 feet above sea level. Bottled with no oak at all, aromas of plum, leather and graphite are sure to delight. The flavor of this wine showcases cherry, herbs de Provence and wet stone with soft tannins running through. Pair this luxurious wine with beef Bourguignon, roasted chantrelles or foie gras.
