Over the last twenty-plus years, Tue-Boeuf has evolved from maverick to mature, into one of the standard-bearers for natural wine in the Touraine and all of France, without losing their renegade spirit (or their tongue-in-cheek humor which shows up on labels as well as in person). Every year, we always are excited to receive the new vintages of these wines. Clean and pure, they always seem to delight with robust personality and honest expressions of the varietals and the soil they have been grown. This is a fun and refreshing vin de soif bursting with honeyed, floral aromas and herbaceous freshness that leads into flavors of stone fruits laced with a citrus, minerally kiss. You can sip this one on it's own or if you'd like a snack, keep it simple and add a board of crackers and goat cheese.
