"Take me to the river, drop me in the water. Push me in the river, dip me in the water." We know what you're thinking, can the grape used for 95% of Sherry production stand on its own as a wine? Well, the answer is yes, the dynamic duo of Alejandro Narváez and Rocío Áspera are changing the way people think about the native grapes in this area of Spain. The fruit is grown in intensely chalky, glaringly white Albariza soils that are equally influenced by briny Atlantic sea air. The result is a subtle bouquet of Gala apple, lychee and raisin leading gracefully into flavors of Calla lily, Asian pear and slight chalk on the tongue. Pair this wine with Paella, fried catfish or jamón serrano.
