Hervé Souhaut is a fantastic winemaker with a reputation for going against the grain of what is normally expected from wines produced in the Northern Rhône region. Hervé uses whole cluster fruit and carbonic maceration on most of his wines which makes his wines very approachable and drinkable in their youth. This Syrah's bouquet has a seductive aroma of violet, black cherry and ripe plum propelling into flavors of green peppercorn, strawberry and cured meat on the tongue. Put a slight chill on this one and pair with beef short ribs, roasted chicken or stuffed shells.
