Winemaker, Rod Hooper, uses organic composts as fertilizer, the soil structure is improved by the recycling of grape marc and sheep grazing is used during winter for weed control. This Aussie opens with notes of smoked paprika, leather and roasted cherries while the palate picks up plum, vanilla and pink peppercorn. Pair this down under beauty with mushroom risotto, an aged cheddar, smoked brisket or even kangaroo.
