Tardana!?! Yes, believe it or not, Tardana is a native grape of Spain that almost disappeared. However, thanks to some forward thinking winemakers, this wonderful varietal is starting to make a comeback. Bodegas Gratias named this wine "Sol" or "Sun" because Tardana needs to ripen longer than most grapes, meaning it receives the most hours of sun in the growing season. This wine showcases  lovely aromas of lemongrass, quince and Winesap apple with delicate flavors of Asian pear and honeycomb finished by a touch of sea salt. This Spanish white would make a lovely pairing with soft shell crab, chicken Marsala or lemon squares.
