The Douce Folie rosé was created by siblings Marie and Simon Normand who took over the family estate in 2013. Together, the two focus on protecting the biodiversity and health of the 11 hectares of vineyards and surrounding environment, in part by planting over 1300 trees and never using herbicides or insecticides. Their continuing efforts focus on limiting the impact on the land with careful water resource and energy management, highlighted by their participation in the Haute Valeur Environmententale and Viticulture Durable en Champagne. This elegant rosé Champagne has an expressive nose with floral notes of violet mingling with raspberry, blackcurrant, Morello cherry and dark plum that broadens on the palate. A creamy perlage dazzles the tongue with juicy berries, brioche, refreshing acidity and a chalky mineral element that lingers on the finish. This lovely bottle of bubbles would be the perfect way to start the evening.
