Started by three friends in 2013, Fossil & Till is a natural wine producer that are starting to make quite a stir in the world of wine. Using a minimalist approach to winemaking, the duo uses only native yeasts with no added sugar, acids, enzymes or sulfites. This Pet-Nat has an intoxicating aroma of grapefruit, baguette, and pear gliding into flavors of nectarine, orange peel and lemon grass. Pair this sparkling Riesling with fried chicken, raw oysters, or even shortbread cookies.
