Made from Yamada Nishiki rice milled to 65% of the original size, leaving this sake rich and full, bursting with umami and deep base notes of soy sauce mingled with grains and freshly cut herbs. Junmai sake tends to be quiet and restrained, but like everything Azumaichi makes, this has a fascinating complexity wrapped in a delicious bundle.
