TASTING NOTES
This family estate located in the Costières de Nîmes takes its name from a wild, aromatic herb “La Patience” that grows throughout the vineyard. Christophe Aguilar, the winemaker, farms the same soil his grandfather did 60 years ago but converted it to organic in 2007. He realized he needed to stop poisoning himself with the chemical treatments they were using, as he felt worse and worse when working in the vineyards. He has a deep respect for the land and is committed to making delicious, reliable wines without overtly heavy manipulations.
Lovely aromatics with hints of raspberry, red currant and cherry awaken the senses while the palate is tantalized by flavors of figs, strawberry and a crunchy minerality. This chillable, crushable red can be enjoyed with a lamb gyro, a falafel pita or roasted leek farfalle or just on its own.
