TASTING NOTES
After several years working for more conventional wineries, Chiara Penati and her husband Michele Conoscente started Oltretorrente in 2010. They farm their land organically but use some biodynamic methods as well. Since acquiring the vineyards, they have done a thorough analysis of the soils and have worked to restore natural soil fertility by planting different grasses and plants that had been hoed for many years. In the cellar, macerations and aging are not standardized and change depending on what the vintage gives them. For both whites and reds, aging is always done on the lees to increase the complexity and stability of wines in the most natural way.
This Piedmont beauty has a fresh nose of bright cherry, dark plum and licorice emanating from the glass. The palate awakens with ripe, red cherries, cassis, earth, and salty minerality backed by bursting acidity and light tannin. This wine begs for a little food and is the perfect wine for pizza or spaghetti with sausage.
