Owner and brewmaster Norio Onda is the fifth generation of his family to steward Onda Shuzo, which has been in continuous operation since 1875. While many breweries source their rice carefully and partner with local farmers, Onda is one of the few domaines which grow their rice. The '88' is a richer style of Sake displaying big aromas of salted toffee, banana and toasted rice. It is salty and savory with lots of umami layers, roasted carob, earth and a tad of sweetness on the end. Pair this robust fella with sesame crusted grilled tuna steak, pork gyoza or mushroom stroganoff.
