Aiyama rice is a rare and highly sought afterrice only grown in Hyogo Prefecture. Sake brewers prize it for its soft grains which dissolve easily during fermentation producing lush sake with beautifully expressive textures, showing off the control and skill of the maker. The Aiyama hasbright and expressive aromas of fresh strawberry moving into flavors of tart, dark cherries with an underlying floral component.
