TASTING NOTES
Do Bojo’ is 100% Bastardo which is genetically identical to French Trousseau and shares similarities with its Jura cousins. Initially, the wine whispers dark plum and bramble berry and a whole lot of limestone and salinity. With a bit of a decant it becomes increasingly floral and adds more black cumin seed, kola nut and green tea bitterness to its repertoire in addition to a very Jura-esque onion skin color from its initial pale red. Stabilized with chestnut flowers rather than any sulfur, this wine shows a pleasant understated elegance as opposed to any funky rawness. -Winemaker's Notes
