TASTING NOTES
The Drasloup is officially classified as a red wine, but it drinks like a refreshing and mineral-driven dark rosé. It opens with an expressive, slightly wild aromatic profile of tart red berries, crushed rose petal, blood orange zest, and a touch of dried herbs, layered over a subtle, earthy undertone. Flavors of sour cherry, pomegranate and cranberry mingle with hints of white pepper and a faint saline edge, creating a wine that feels energetic and alive. YUM!
Winemaker Fernando Paiva adds ground chestnut flowers to the grapes and must before fermentation begins, which helps to stabilize the wine. The region is home to numerous centuries-old monasteries and this technique has been passed down through longstanding monastic winemaking traditions.
