TASTING NOTES
In 1969, Jacques Beaufort discovered an allergy to the chemicals used in his vineyards. In 1970 he eliminated all chemical use, becoming one of the very first Champagne producers to use 100% organic grapes. He now uses homeopathic treatments, aromatherapy, and compost to support vine health. The property, which spans the prestigious regions of Ambonnay (Grand Cru) and Polisy, is now managed by Jacques' sons Constant and Réol, who carry on the practices put in place by their father.
This André Beaufort Polisy Brut Réserve is elegant and complex, balancing purity of fruit, natural vibrancy and earthy depth. An aromatic profile reveals notes of yellow fruit, white flowers and wild herbs with fresh baked bread lingering in the background. The palate is fresh and creamy with fresh-cut apple, lime zest and vibrant acidity, complemented by a mineral vein running through. It would be delicious with crudo, ceviche, or a platter of briny oysters.
