Champagne Chavost, a cooperative winery founded in 1946 in the village of Chavot, has evolved under the leadership of Fabian Daviaux from a traditional volume-based co-op into a more dynamic operation representing over 70 multi-generational growers. Under Fabian's leadership, the co-op made a bold shift toward natural winemaking by using its 5.5 hectares of organic vines to produce additive- and sulfite-free wines, a rare move in tradition-bound Champagne. In addition to no added sulfur, the wines do not receive a dosage. What remains is an honest reflection of the winemakers and the unique terroir.
