Cahors, Southwest, France
Interesting fact, the wine of this region has such a deep color that they were commonly referred to as "Black Wines" in the past. This wine was beloved by roman emperors who authorized the vines to be planted some 2000 years ago in France. This wine offers up a meaty bouquet of stewed plum, tobacco leaf and slight copper leading into flavors of black cherry, cocoa and plum. Pair this wine with sage and brown butter ravioli, pink peppercorn lamb or a bacon wrapped filet mignon.
