Beaujolais Villages, Burgundy, France
Husband and wife team, Nicolas and Céline Hirsch, are originally from Alsace but fell in love with the land and wines of Beaujolais. While they’re not certified Organic or Biodynamic, they use many of the similar methods to treat the vines and have won awards for their environmentally friendly vineyard management. At harvest, everything is hand-picked to focus on quality, and the wines undergo fermentation via wild yeasts in cement tanks. The bouquet of this wine offers notes of fresh cut peony, blackberry and cherry while the palate will detect flavors of raspberry, plum and slight potting soil. Pair this gulpable Gamay with chicken dumplings, fried calamari or a spinach salad with roasted beets.
