Valpolicella Ripasso or baby Amarone is made by refermenting a young Valpolicella wine over the leftover grape skins and seeds (pomace) from a freshly pressed Amarone winewhich amplifieys texture, alcohol and savory complexity without sacrificing freshness. The result is an intense yet lifted Ripasso with black cherry, dried violet, tobacco leaf, and cracked pepper carried on a saline, limestone spine. Its interplay of richness and mineral drive makes it an ideal partner for braised rabbit with rosemary, roasted squab, or aged Asiago—dishes that echo the wine’s depth while keeping pace with its underlying precision. -Importer's Notes

"The 2022 Valpolicella Ripasso Valpantena Superiore Acini Ameni is darkly floral with a sweet herbal resonance up front and nuances of blood orange. Silken textures and ripe red berry fruits sweep across the palate, propelled by brisk acidity and a bitter twang of dark chocolate that pinches at the cheeks. It finishes with exceptional length yet remains fresh, leaving hints of citrus-tinged tart cherry. Nicely done."
