TASTING NOTES

COS began in 1980 when three friends, who are now three of the most prominent winemakers in Sicily, began to apply organic and bidynamic principles to an inherited vineyard on the southern tip of the island. Over 40 years later, Giambattista Cilia, Cirino Strano and Giusto Occhipinti continue to produce terroir-driven wines with thoughtful approach that follows the wine from vine to bottle.

 

“Passito” refers to the technique of drying or raisining grapes on or off the vine to concentrate their natural sugars. In this case, the grapes are left to dry on the vine before being hand-harvested, allowing their sugars and flavors to intensify, resulting in a dessert wine with a beautiful balance of sweetness, richness and complexity. The Æstas Siciliæ alights on the palate with notes of apricot jam and candied pineapple, and finishes velvety smooth with floral tones and a hint of baking spice. Savor this wine after a big meal with a warm slice of pecan pie, or on it's own when you need a little sweetness.
