TASTING NOTES

Sacy is a tiny hamlet near Crézancy and Bué in the Sancerre region of the Loire Valley. Karine Millet has just recently taken over the family domaine. Karine practices polyculture farming, the historical practice in Sancerre,  which is the practice of growing more than one crop species in the same space. Cow manure from the farm is used in the vineyards and the domaine is presently in conversion to certified organics - no herbicides or pesticides. 

 

This Sancerre leads with an aromatic bouquet of tropical fruit and light grapefruit cascading into flavors of lemon curd, ripe pear, yellow plum and crushed stone. It's a mineral driven Sancerre with racy acidity and would be delicious with fried chicken, goat cheese and spinach ravioli or ceviche.
