TASTING NOTES
Located in the village of Irouléguy, this centuries-old family estate run by Peio Espil reflects a strong Basque identity and commitment to organic viticulture. Espil blends tradition with ongoing exploration, producing wines that are expressive, deeply textured, and increasingly influential within the appellation. The rosé, made from Tannat and Cabernet Franc, is fermented in stainless steel (including malolactic fermentation) to enhance its depth and roundness. It's rich and concentrated with flavors of red currant, sour cherry and fresh herbs layered over earthy, mineral tones. Served slightly chilled, it’s a versatile, food-friendly wine suited for savory dishes like Jambon de Bayonne, seafood stews or a or herb-marinated chicken.
