The small estate of Domaine Bouchet, run by husband and wife Matthieu and Sylvanie, has been farmed according to biodynamic principles since 1962. In fact, Matthieu's father, François, was a leading French consultant in biodynamics. The Bouchets still farm according to the strictest principles of biodynamics using no chemical fertilizers, pesticides, or additives of any kind. This wine reveals an enticing nose of sage, raspberry and plum while the tongue is sure to experience flavors of green pepper, blackberry and violet. Pair this alongside beef tenderloin, mushroom quiche or chicken enchiladas.
