Founded by two brothers, Domaine Thillardon is a vineyard trying to make a difference in Beaujolais. Paul-Henri founded the domaine in 2008 with his brother Charles, a former dairy farmer. All the parcels are farmed organically and plowed with two horses that they keep in a friend's pasture nearby. Luscious notes of violet, forest floor, and bing cherry excite your nose while flavors of strawberry, saddle leather, and plum tingle your tongue. Pair this beautiful Beaujolais with roast chicken, steak tartare, or seared salmon.
