TASTING NOTES
Assyrtiko is a Greek white grape, primarily known for its high acidity, minerality, and ability to produce both dry and sweet wines. It's particularly famous for its role in the wines of Santorini, where it thrives in the volcanic soil. The Atlantis is crisp and clean with vivacious lime and mineral aromas. Floral, lemon zest and wet stone lead to refreshing acidity on the tongue with a lingering saline finish. This Greek white screams for seaside fare and would be ideal with shrimp and seared-scallop pasta, grilled halloumi or fried sardines.
