"Toto, we're not in Kansas anymore," be prepared for a wine that is seemingly extraterrestrial. Grown on the highly volcanic soil of the Canary islands, the terrain is much more similar to Mars than Earth. This wine's flavor seemed to morph and change almost every half hour or so for us. On the nose, first, sulfur, black pepper, and bacon fat while the tongue experiences potpourri, tamarind and popcorn with slight mineral inflections. But be warned, this wine is a chameleon and can change in the blink of an eye. Pair this wine with sirloin steak, stewed beets or braised octopus.
