"Toto, we're not in Kansas anymore." Be prepared for a wine that seems extraterrestrial in origin. Grown on the volcanic soil of the Canary islands, the terrain is more similar to Mars than Earth. To keep with its alien feel, the flavor seems to morph and change every half hour. On the nose is a sniff of sulfur, black pepper, and bacon fat, while the tongue tags potpourri, tamarind, and popcorn with a slight mineral inflection. But be warned: this wine is a chameleon and will change in the blink of an eye. Pair this wine with sirloin steak, stewed beets, or braised octopus.
