TASTING NOTES

Martin Vajčner's new white wine is aged under bloom! The Omne Vivum OX OVO has 

been aged on the lees under flor for 12 months, creating a thin layer of yeast that protects the wine while slowly shaping its character. Wines aged under flor give the wine an enhanced mineral feel, a gentle aromatic lift and a light oxidative touch. Mineral-driven and vibrant, this blend has ripe apple, spice, toasted nuts and a subtle saline character complemented by just the right touch of oxidation, with a gentle creamy texture and a smooth, lingering finish.
