The Mestres family has worked with Cava since the late 1920's. Their mission has always been to produce wine of utmost quality using only natural and traditional methods. Most Cava producers buy their grapes from independent vineyards and therefore don't have much control as to what kind of product walks through their door to be made into wine. The Mestres estate has had 80 hectares of vines since 1312, hence the name "Mestres 1312." This Cava has a delicate nose of fresh greens and a lively mousse. The palate reminds me of a light summer dessert: A toasted biscuit with a dollop of cream and diced pears garnished with a pinch of cinnamon.
