TASTING NOTES

Col Fondo refers to a traditional method of making lightly sparkling wine where the secondary fermentation happens in the bottle, and the wine is not disgorged, so the spent yeast (lees) remains in the bottle. The Rodica is a naturally sparkling red with aromas of black cherry compote and tomato leaf that lift from the glass, edged with a hint of spice and earth. Dry and brisk on the palate, it balances juicy dark fruit with bright acidity and a subtle savory note, finishing fresh, energetic and lightly textured. Serve it cold as an aperitif, with charcuterie, young cheeses, or not so sweet panna cotta or strawberry cheesecake.
