Calcite, a rare and ancient form of limestone in California, is the dominant geologic material of the soils in the Cienega Valley. This wine reflects the distinctive character of the region’s alkaline soils and the influence of its dramatic diurnal temperature shifts—warm days and cool nights—which promote both ripeness and vibrant freshness. Mineral driven with refreshing acidity, pair this wine with cured meats, pork chops or a simple mediterranean salad.
