This is a unique sake crafted using wine yeast, which enhances both its acidity and sweetness. It is a genshu sake, meaning undiluted, yet it has a relatively low alcohol content of 12% ABV because the wine yeast is less vigorous than traditional sake yeast. It has a distinctive aromatic profile of fresh pineapple, soft mushroom, and blanched peanuts. The palate is rich and textural, opening with green mango and hints of orange creamsicle before deepening into honeycomb richness.
