Our Dark Rum is a masterful blend of 8-year-old Barbados and Dominican column still rums, combined with high-ester Jamaican pot still rum, and Trinidadian rum. Aged in American white oak ex-bourbon casks. No added sugar, coloring, or flavoring. This expression features notes of baking spice, banana peel, yellow apple, tobacco, cedar, nut loaf, and leather. It can be enjoyed on its own or truly uplevel any cocktail experience.
VISUAL
Honey-amber color, moderate viscosity, with golden yellow hues.
NOSE
Driven by cooked fruit character, and baking spices. Esters are quite present, banana peel, and baked yellow apple. Nut loaf, oatmeal cookie, roasted nuts and toffee. Also some fresh fruit oil aromas (orange and lemon). A bit vegetal as well, some wet grass.

STRUCTURE
On the palate, much more savory in character versus driven by esters. Tobacco, cedar, mulch, and vanilla. Baked apples and banana bread. Worn leather flavors. Tangy and nutty. Acidity is moderate plus, refreshing and zippy. Body is moderate plus, very textural and oily. Sweet orchard fruit flavors but not cloyingly sweet, finishes dry and clean.
