Spirits Industry veteran Dave Schmier began Proof & Wood in 2015, with the goal of compiling a portfolio of some of the best spirits in the world through the time-honored tradition of independent blending and bottling. Although the cornerstone of the company’s selection is American whiskey, its spirits span a range of categories. A focus on aging, blending, and bottling rather than distilling—quite literally the proof and wood involved in the crafting of these spirits—has resulted in a curation of stellar distillates that are must-haves for cocktailing and sipping alike.
The Deadwood Bourbon is distilled in Indiana and Tennesse, and blended and bottled in Bardstown, Kentucky by Proof and Wood. It is blended in small batches of approximately 20 barrels and aged a minimum of 2 years. Aromas of date and nutmeg lead to a palate of Bosc pear with hints of vanilla and a lingering flavor of caramel.
